The Macallan 10 Year Old as a ‘Rob Roy’ cocktail

TASTING NOTES:  Color: Pale Straw; Nose: Complex, with hints of fresh fruit and heather honey; Palate: Soft, with a maltiness, balanced with oak and fruit.
Finish: Lingering with hints of white oak and fruit.

Macallan Fine Oak 10 2.5 ounces
.75 ounces of sweet vermouth
Dash of Angostura bitters
Pour over rocks and garnish with
Lemon zest and Maraschino cherry

First Course

2008 Oak Cliff Cellars Napa Valley Chardonnay

WINEMAKER NOTES:  Not your typical oaked and buttery Chardonnay, this wine is pure fruit: crisp, refreshing with melons, pear and green apple in the mouth.  Try this versatile white wine with your favorite appetizers or snacks, salad, fish, chicken and cheese...or a great wine just for a nice refresher after work or at the beginning of any party or dinner. *Only 56 cases made.

We think this is a perfect unoaked white to pair with seafood and shellfish – clean flavors to enhance a steamed or boiled shrimp; balanced acidity to pair with fried or sauced shellfish.

2008 Oak Cliff Cellars Napa Valley Chardonnay
The Chardonnay pairs just as beautifully with a traditional Caesar Salad with crisp acidity to meld with a creamy Caesar

Third Course

2008 Oak Cliff Cellars Firebrick Reserve Zinfandel

WINEMAKERS NOTES:  This Zinfandel is all about elegance, spice and finesse.  The perfect wine with almost any meal, this red wine will pair very well with red and white meats without overpowering.  As your meal progresses, the flavor profile of this Zinfandel will continue to evolve in the glass -- bringing out new dimensions and tastes with every sip! *Only 64 cases made.

We love this with either the filet or the salmon – a hearty, spicy accompaniment with beef; and a bold wine that can bring out the richness of perfectly prepared salmon.

Fourth Course

2008 Lake County Petite Sirah, Oak Cliff Cellars

WINEMAKER’S NOTES:  If you liked the '07 Petite Sirah, you'll fall head over heels with the '08!  This plummy, deep purple wine has seductive nose of violets and a delicious flavor profile of boysenberries, blueberries and blackberries -- with dark chocolate notes on the finish.  This wine is big enough to stand up to pork, game or beef, but soft enough to pair with salmon, chocolate or mixed berries.  Still a very young wine, our '08 Petite Sirah will age for several years and only get more velvety in the process.  Only 71 cases made. 

We think this is the wine for chocolate.  Distinct floral and red fruit aromas meld in to subtle coffee and dark chocolate flavors which linger on the finish. Beautiful!

The Macallan 18 Years Old

TASTING NOTES:  Color: Light Mahogany;
Nose: Dried fruits and ginger with hints of citrus, vanilla and cinnamon;
Palate: Rich dried fruits, spice,clove, orange and wood smoke;
Finish: Full dried fruits and sweet toffee, with a hint of ginger and wood smoke.

Best served neat.
